Kim’s 3 Sure-fire Breakfast Recipes to Beat the 11am Biscuit Craving

Ultimate Superfood Omelette

Ingredients:

  • 1 tsp coconut oil
  • 1/2 onion, diced
  • 1 garlic clove
  • 1/2 red chilli, sliced thinly
  • 1 handful chopped kale
  • 1 handful chopped spinach
  • 1 tsp ground coriander
  • 1 chopped avocado
  • 1 tbsp tahini
  • 1 handful chopped parsley
  • 4 eggs, whisked
  • 1 large tbsp green or brown lentils, cooked (I like Gourmet pre-prepared lentils)

Method:

  1. Melt the coconut oil in a saucepan, then sauce the onion, garlic and chilli for 5-10 minutes.  Add the kale, spinach, coriander, avocado, tahini and parsley; stir and season well.
  2. Pour the whisked eggs over the vegetables, put a lid on it and cook for 5 mins.
  3. Serve with a large tablespoon of green or brown lentils
  4. Plate up or eat straight from the pan… c’mon, we all do it!

Ultimate Superfood Smoothie

Ingredients

  • Handful of berries
  • 1 small banana
  • 1 tbsp ground flaxseeds
  • 1 tsp chia seeds
  • 30g protein powder
  • 2 scoops greens powder
  • 1 scoop L-Glutamine powder
  • 1 tbsp coconut oil
  • 1 tbsp walnuts
  • 6 cubes of ice
  • 400ml almond milk

Method:

  1. Place all the ingredients into a blender and whizz until smooth. If using a Nutribullet, place a little milk into the blender cup first before adding the other ingredients and shake well before blending.

Ultimate Quinoa Muesli

Ingredients:

  • 45g oats
  • 90g cooked quinoa (simmer for 15 mins then rinse under cold water)
  • 1 tbsp chia seeds
  • 1 tbsp sunflower seeds
  • 2 tbsp shredded coconut
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp vanilla extract
  • 75g blueberries
  • 120ml coconut water
  • 60ml coconut milk
  • 120g coconut yoghurt
  • 1 scoop protein powder

Method:

  1. Mix the oats, quinoa, chia seeds, sunflower seeds, coconut, cinnamon, ginger and vanilla essence together in a bowl.
  2. Lightly mash the blueberries and stir.  Then add the coconut water, milk, yoghurt and protein powder.  Stir well and refrigerate overnight.
  3. In the morning, divide the mixture between two bowls and top with a spoonful of coconut yoghurt, blueberries and some coconut flakes.  Adding crushed nuts here would give some nice crunch.  Enjoy!
